How Cook Chicken Without Hospital

The Situation

Man has chicken. Man wants chicken cooked. The gap between these is small, but inside the gap lives a tiny invisible enemy that can put man on the bathroom floor for two days. We respect the gap.

Why Man Brain Think This Is Hard

Brain cannot see "cooked." Outside goes brown and brain shouts "DONE, EAT." But brown is a liar. Outside browns long before the middle is safe. Man needs a number, because eyes cannot be trusted and "looks alright" has hospitalised better men than you.

The One Number

Chicken is safe at 74°C (165°F) in the thickest part. That is the whole secret. Hit that number, the enemy dies, man eats, man does not go to hospital with liquid poop.

Clever move: pull the chicken out at about 70°C and let it rest a few minutes. Heat keeps climbing in the meat (this is real, it is called carry-over) and it coasts up to 74°C while staying juicy instead of dry and sad.

Stuff Man Need

  • A meat thermometer. £8. Ends the guessing forever. Best small kitchen purchase a man can make.
  • A pan or oven. You have one.
  • A board and knife for raw chicken only. See Do Not, below.

Man Do This

  1. Pat the chicken dry with kitchen roll. Dry skin browns, wet skin steams.
  2. Cook it. Pan, oven, whatever. Breast roughly 18 to 20 min in a hot oven; thigh is more forgiving.
  3. Poke the thermometer into the thickest part, not touching bone.
  4. See 70°C+? Take it out. Rest 3 to 5 minutes. It climbs to 74°C while you plate up.
  5. Cut in. Juices run clear, no pink at the bone. Man eat.

Man Do Not Do This

  • Do not wash raw chicken. Splashing sink water flings the enemy round your whole kitchen. The cooking is what kills it, not the rinse.
  • Do not let the raw-chicken board or knife touch anything you eat raw. Same board for chicken then salad is how a good dinner becomes a bad night.
  • Do not trust "looks done." Brown outside, raw middle is the classic trap.

Reward

Hot, safe, juicy chicken. No 3am negotiations with the toilet. Man fed himself like a functioning adult and has leftovers for tomorrow. Quietly heroic.
